Asparagus Guacamole

Here is a great recipe to use as an alternative to avocado guacamole as well as a topping for your favorite sandwich or burger. You will be the hit of the party.

Ingredients:
• 1 LB Asparagus Large
• 1 each Chipotle Adobo pepper
• 1 teaspoon E.V.O.O. (Extra Virgin Olive Oil)
• 1/2 cup Plain Yogurt
• 2 Avocados
• 1 each Plum Tomato
• 1 Tablespoon Green Onion
• 1/4 cup chopped Cilantro
• 1 teaspoon fresh Lime Juice
• 3 each garlic cloves
• 1/2 teaspoon sea salt
• 1/2 teaspoon black pepper
Tortilla Chips (Place in warm oven while preparing above ingredients)

Preparation:
Blanch asparagus and cut into chunks. Make sure that you keep asparagus at a green stage. Place all ingredients in a food processor and chop until desired consistency.  Serve with fresh tortilla chips.
