Located in the historic Hotel Max, Miller’s Guild opened in 2013 as Seattle’s newest, boldest pantheon of all things meat. Built around a mammoth, 9-foot wood-fire grill (lovingly called the Infierno by staff), Miller’s Guild sets itself apart with its commitment to nose-to-tail menu offerings, including everything from an Oregon-raised, boneless ribeye, to corned beef tongue, to lard in place of butter for its focaccia appetizer bread. Desserts are sinfully, excessively indulgent. Expect a wine list heavy on reds to compliment meat pairings.
