Grilled Strip Steak

  • 2 boneless strip steaks
  • olive oil
  • salt and ground black pepper, to taste


  • Remove strip steaks from the refrigerator and transfer to a clean plate or cutting board. Salt both sides generously and allow them to sit at room temperature for 45 minutes
  • Preheat the grill to high heat
  • Brush olive oil on both sides of the strip steaks. Sprinkle salt and pepper on both sides, to taste
  • Place steaks on the high-heat area of the grill. Cook for 4-5 minutes on each side, flipping only once with tongs
  • Check that the internal temperature is 120-125 degrees for medium-rare. If you'd like more doneness, leave on the grill over low heat for another 1-2 minutes
  • Transfer steaks to a clean plate and tent with foil. Allow to rest for 5-10 minutes before serving
