Remove strip steaks from the refrigerator and transfer to a clean plate or cutting board. Salt both sides generously and allow them to sit at room temperature for 45 minutes
Preheat the grill to high heat
Brush olive oil on both sides of the strip steaks. Sprinkle salt and pepper on both sides, to taste
Place steaks on the high-heat area of the grill. Cook for 4-5 minutes on each side, flipping only once with tongs
Check that the internal temperature is 120-125 degrees for medium-rare. If you'd like more doneness, leave on the grill over low heat for another 1-2 minutes
Transfer steaks to a clean plate and tent with foil. Allow to rest for 5-10 minutes before serving
