Salt each side of the steaks generously and leave at room temperature for 45 minutes. Preheat the oven to 400 degrees. Heat a cast-iron skillet with butter or oil over high heat
Sprinkle pepper on both sides of the steaks. Sear steaks on each side for 2-3 minutes, flipping only once
Transfer the skillet to the middle oven rack. Cook for 5-10 minutes, or until the steak reaches the temperature range for your preferred doneness
Move steaks to a clean cutting board or plate and tent with foil. Rest for 5-10 minutes
