Simple Beef Tenderloin

Ingredients
  

  • 2-3 lbs beef tenderloin
  • 2 tbsp olive oil
  • 2 tsp salt
  • 1 tsp black pepper
  • 4 cloves garlic, minced
  • 2 sprigs fresh thyme (or herb of choice)

Instructions
 

  • Preheat your oven to 425°F (220°C).
  • Trim any excess fat or silver skin from the beef tenderloin.
  • Rub the beef tenderloin with olive oil and season generously with salt and pepper. Press the seasoning onto the meat.
  • Heat an ovenproof skillet over medium-high heat. Once hot, sear the beef tenderloin on all sides until it's nicely browned, about 2-3 minutes per side.
  • Add the minced garlic and fresh thyme to the skillet. Tilt the skillet and spoon the hot oil over the meat to infuse flavor.
  • Transfer the skillet to the preheated oven and roast for about 20-25 minutes for medium-rare, adjusting the time for your preferred level of doneness. Use a meat thermometer to check doneness (145°F or 63°C for medium-rare).
  • Remove the beef tenderloin from the oven and let it rest on a cutting board for 10 minutes. This allows the juices to redistribute, ensuring a juicy tenderloin.
  • Slice the beef tenderloin into thick rounds and serve with your favorite side dishes. Enjoy your simple and delicious Beef Tenderloin!
