Beef Oven Roast

Ingredients
  

  • 1 3lb bottom or top round roast
  • 2 tbsp olive oil
  • 1 tsp minced garlic or garlic powder
  • 1/2 tsp ground black pepper
  • 1 tsp kosher salt
  • 1 tbsp chopped fresh rosemary or 1/2 tsp ground dried rosemary
  • 1/2 tsp dried oregano
  • 1/2 tsp dried thyme

Instructions
 

  • Let the roast rest on the counter for up to 30 minutes so it comes closer to room temperature. While the roast is resting, preheat the oven to 350 degrees.
  • Mix all of the seasonings together. Rub the surface of the roast with the oil, then the seasonings.
  • Set the roast on a roasting pan with a rack and put it into the oven.
  • Cook the roast for 1 hour, or until the internal temperature is at least 135 degrees F.
  • Cover and cook for an additional 15 minutes.
  • Remove, let stand under cover for 10 minutes, and then slice and serve.

Notes

Avoid letting the roast get too far above 150 degrees F internally. The meat can contract again and toughen up or become so soft it falls apart when you try to slice it. Look for the 135 degree F mark and then give the roast just 10 to 15 minutes more cooking time to ensure it’s tender but still firm.
