Simple Grilled Sirloin Steak Recipe

Ingredients
  

  • 2 sirloin steaks 1–1.5 inches thick
  • Kosher salt to taste
  • Freshly ground black pepper to taste
  • 1 tbsp olive oil plus more for brushing grill grates

Instructions
 

  • Remove steaks from the fridge and season generously with salt on all sides. Let rest at room temperature for 45 minutes.
  • Preheat grill to medium-high heat (around 450 degrees) and brush the grates with olive oil.
  • Pat steaks dry with paper towels. Brush lightly with olive oil and season with pepper, if desired.
  • Place steaks on the hottest part of the grill and sear for 2-3 minutes per side.
  • Move steaks to a cooler area of the grill and cook for another 2-8 minutes, depending on desired doneness. Use a digital meat thermometer for accuracy.
  • Remove from the grill when they’re 5 degrees below your target temperature and rest on a plate loosely tented with foil for 5-10 minutes before slicing.

Notes

If marinating the steaks before grilling, be sure to pat them completely dry and allow them to rest at room temperature for 15-20 minutes. You don’t need to salt or season the steaks, but you can if you’d like. Optionally, boil your leftover marinade and use it to baste the steaks while they cook on the grill.
