Prepare the Spice Mix: In a small bowl, combine paprika, cayenne pepper, garlic powder, onion powder, dried thyme, salt, and black pepper. Mix well.
Prep the Salmon: Pat the salmon fillets dry with paper towels. Brush both sides with olive oil and generously coat with the spice mix.
Preheat the Grill: Heat the Blackstone grill over medium-high heat until hot.
Grill the Salmon: Place the salmon fillets on the grill, skin-side down. Cook for about 4-5 minutes until the skin is crispy. Carefully flip and grill for an additional 3-4 minutes, or until the salmon flakes easily with a fork.
Serve: Remove the salmon from the grill and let it rest for a couple of minutes. Serve with lemon wedges and garnish with fresh parsley, if desired.
