Cut the Carbs, Not the Flavor: Low-Carb Flat Iron Taco Recipe

Ingredients
  • 1lb. flat iron steak from Chicago Steak Company
  • 1tsp chili powder
  • 1tsp Cayenne pepper
  • salt and pepper, to taste
  • 1 tomato, diced
  • 2 avocados
  • 4tbsp unflavored Greek yogurt
  • 1cup pickled red cabbage
  • cilantro leaves
  • 8 low-carb soft tortillas (or romaine lettuce leaves, if you’re going very low-carb!)
Instructions
  1. Preheat a large skillet over medium-high heat with 1 tbsp of oil.
  2. Slice avocados into thin strips and dice tomato and onion.
  3. Season flat iron steaks with salt, pepper, cayenne pepper, and chili powder.
  4. Place steaks flat on the skillet. Sear for 5 minutes or until light brown crust forms, flip and do the same to the other side.
  5. Remove steaks from the skillet and place onto a cutting board. Allow them to rest for 5 minutes and then slice into thin strips.
  6. Spread about ½ tbsp of unflavored Greek yogurt onto each tortilla or lettuce leaf. Add a few strips of flat iron steak and top with red cabbage, avocado, tomato, and cilantro leaves.
