Our Quality & Aging Process
Quality & Aging
At Chicago Steak Company, everything begins with the cattle. We partner with American ranchers who raise their cattle responsibly & sustainably. It’s honest work that produces exceptional beef.
We focus on the very best — USDA Prime — the highest grade of beef available:
USDA Prime
- Known for abundant marbling — those delicate white flecks of fat that melt during cooking
- Only the top 2% of all U.S. beef earns this grade
- Delivers unmatched tenderness and flavor
Premium Angus (Upper 1/3 USDA Choice)
- Just shy of Prime quality, but still exceptional
- Offers similar flavor and tenderness at a better value

Wet or Dry Aged Options
Each steak is aged for up to 6 weeks to enhance tenderness, juiciness, and flavor. We offer two premium aging methods:
Wet-Aged Steaks
- Aged in their own juices for enhanced tenderness, texture, and moisture.
Dry-Aged Steaks
- Aged in open air under controlled conditions for a rich, complex, nutty flavor profile.

We take pride in doing things the right way to ensure top-quality steaks:
- Hand-carved the old-fashioned way
- Vacuum-sealed and flash-frozen to preserve peak flavor and texture
- Always USDA graded – no shortcuts or made-up “house” labels
- Proudly offer USDA Prime, the gold standard of American beef
When you see the USDA Prime shield on a Chicago Steak Company box, you know you’re getting real quality.
