How to Cook Your Steak – Quick Guide

Thawing
If frozen, thaw your steak in a pan under refrigeration for about 24 hours to catch any natural drippings.

Season & Handle
Season just before cooking. Always use tongs when flipping—never a fork, which can puncture the steak and lose some of those flavorful juices.

Resting
After cooking, let your steak rest for at least 5 minutes so the juices redistribute evenly.

Steak Cooking Tips

Below are a few additional pointers to help you get the most out of your steak:

1. Know the cut.
Steaks are most tender and flavorful when cooked to the proper doneness- avoid overcooking.

2. Preheat well.
Your grill or broiler to hot. Charcoal should be ashen gray; cast iron should be hot but not smoking.

3. Season simply.
Salt and pepper are all you need- or elevate the flavor with Chicago Steak Company Seasoning.

4. Lightly oil the surface.
This helps prevent sticking and promotes a proper sear.

5. Sear the first side.
Cook until juices begin to bead on the surface, using the Steak Cooking Chart as a guide.

6. Flip & Finish.
The second side cooks faster, so keep a close eye on it.

7. Check Doneness.

Rare: 120°–125° F (very soft; cool red center)
Medium Rare: ~130-135°F (springy, warm red center)
Medium: 140°–145°F (slight resistance; warm pink center)
Well Done: ~160° (firm; little to no pink)

Make sure to measure temperatures at the thickest part of the steak and keep in mind steak temperature will rise 5–10°F during resting (carryover cooking).

8. Rest & serve.
Let the steak rest for at least 5 minutes before serving for a juicy, flavorful result.

Wine

Ribeye Wine Pairing

The Ribeye steak is known for its abundant marbling (good fat content within the steak) and fat content is an important aspect to consider when pairing a wine. With that in mind, a red wine is the perfect pairing for this steak. Its also safe to say that your chardonnay may not be the best choice for this steak.

Both Cabernet Sauvignon and Zinfandel work perfectly with the Ribeye. Your choice will depend on how robust you like your wine flavors. Both score right in the middle of the wine sweetness scale, but the Zinfandel has some spiciness weaved into its fruity flavor.

Food not properly sealed

I've ordered four times from you, and the food on two orders the food needed to be sealed appropriately. The first time, it was steaks, and the last time, it was the Sea Bass. I will not be giving any recommendations to my associates to make any purchases from this company. On my first review, I was under the impression that the unseal steaks would be replaced, but that never happened, so I didn't even reach out to complain about the Sea Bass because I felt nothing would happen as in the first complaint.

These are glorious steaks! I personally prefer dry aged, where you get that aged flavor, and there are great options at Chicago Steak Company for that, but if that's not your bag, these wet aged steaks are top quality and you cannot go wrong.

Delicious, even if different thickness to steaks

These steaks arrived quickly and packed well. As always - they were delicious and perfect for a birthday dinner. The reason for the 4 stars instead of 5 is that the thickness was inconsistent between the steaks. Some people may like that if people in their group want different doneness to their steaks and it's obviously easy enough to cook them for different times if you want them even. Still, I would have preferred all with the same thickness.

Tender and adelicious

Steak was well marbled, clean trimmed, and delicious when grilled.
In that most of our steak cooking is done on a grill the only suggestion I would have is to be able to get the same cuts 1-1/2' thick as the thinner cuts tent to cook too fast when searing at high temps.

Disappointed

Taking way too long to come. It was a gift for my dad's birthday, I still don't have my streaks and the delivery date keeps getting pushed back! It's been 2.5 weeks. On top of it, I never received a confirmation/receipt and had to call for them to send it to me, I will not be ordering here again. I am an elite yelper. I unfortunately will have to leave a bad review for the service. Hopefully the steak is the best I ever had otherwise I will be even more disappointed.

This steak was good but not great like your NY Strip or Filets. Overall, though I have been extremely pleased with my purchase's from Chicago Steak Co. I would rate you right up there with Allen Brothers. Would like the NY Strips to be a little thicker. I will continuing my purchases.
