Overall you should expect the flavor to be more intense and pronounced, the taste is usually described as nutty or earthy. Cooking Instructions

How to Cook Your Steak – Quick Guide

Thawing
If frozen, thaw your steak in a pan under refrigeration for about 24 hours to catch any natural drippings.

Season & Handle
Season just before cooking. Always use tongs when flipping—never a fork, which can puncture the steak and lose some of those flavorful juices.

Resting
After cooking, let your steak rest for at least 5 minutes so the juices redistribute evenly.

Steak Cooking Tips

Below are a few additional pointers to help you get the most out of your steak:

1. Know the cut.
Steaks are most tender and flavorful when cooked to the proper doneness- avoid overcooking.

2. Preheat well.
Your grill or broiler to hot. Charcoal should be ashen gray; cast iron should be hot but not smoking.

3. Season simply.
Salt and pepper are all you need- or elevate the flavor with Chicago Steak Company Seasoning.

4. Lightly oil the surface.
This helps prevent sticking and promotes a proper sear.

5. Sear the first side.
Cook until juices begin to bead on the surface, using the Steak Cooking Chart as a guide.

6. Flip & Finish.
The second side cooks faster, so keep a close eye on it.

7. Check Doneness.

Rare: 120°–125° F (very soft; cool red center)
Medium Rare: ~130-135°F (springy, warm red center)
Medium: 140°–145°F (slight resistance; warm pink center)
Well Done: ~160° (firm; little to no pink)

Make sure to measure temperatures at the thickest part of the steak and keep in mind steak temperature will rise 5–10°F during resting (carryover cooking).

8. Rest & serve.
Let the steak rest for at least 5 minutes before serving for a juicy, flavorful result.

I’ve tried a number of different online home delivery steak companies, in my opinion, Chicago steaks will be my go to for online ordering.

My preferred cut is a Ribeye, the ribeyes from Chicago steaks have the perfect amount of marbling for my taste. The dry rub marinade they include is complementary to the steak without overwhelming the flavor of the steak.

Cost is a little higher than other options but the quality and flavor of the meat is worth the cost to me.

Great flavor

We are exploring different cuts of beef now that we purchased a compact freezer.
The steaks were rich with flavor, quality difference from store purchased is huge. I did wish the steaks were thicker than 1 inch.

First time ordering the dry aged ribeyes. We have tried the wet aged and enjoyed them. We were not disappointed with these. Delicious, tender, flavorful, you will not be disappointed. Prime Dry Aged Ribeye - Meh

Put two of these up against two choice Costco steaks - the dry aged prime failed miserably. Costco steaks were tastier and more tender

I had to try the " Dry Aged " steak because I have heard from many people how good they are plus I read your reviews so my wife and I tried a 16 oz Ribeye ... they were great and we will order again but may go to the 14 or 12 Oz because 16 oz is a bit too much . Thanks

The flavor of the meat is not as good as I would have liked it for prime beef

Operational failures

I've been a big fan of Chicago steaks for years, but must regrettably say, things have gone downhill.
December I placed an order to be delivered on a pre-selected date in January which did not arrive for my dinner party. Turns out it never left the dock.
Place another order in February which arrived late, with contents at room temperature. I froze them all but I'm reluctant to cook them, not knowing if they went bad.

So in conclusion while the steaks used to be good, the shipping department could learn a lot from Allen Brothers.

Ribeye Dry Aged

This was a very disappointing steak. The Ribeye looked more like a Strip Steak,, Its cut was either one of the first or one of the last... Did Not resemble the picture....
In the aging process, I know that salt is used and I could taste the salt..the other steak , you could not taste the salt. I never salt a steak. enclosed is a picture of the rib eyes we cooked last night ...The favor was okay except for the SALT !!!! We prefer a ribeye that looks like the one in your catalog,

Overrated steak. this is no a Prime cut nor taste like an aged steak

Received in rural location a day later than promised but still frozen solid. Excellent quality and flavorful. Even the added beef cubes were tender and very high quality when used on grill on skewers! Ribeyes were outstanding

Steak was great

These steaks were the best I've ever had. My wife thought it was funny how I studied the cooking instructions so carefully and tried to do everything perfectly. In the end she admitted it was all worth the effort. Looking forward to trying either the strip steaks or porterhouses next. Going to try the top third choice to see how they are.

Worth the money

I have bought steaks from most of the major high end shops, without naming names I can say these were as good as I've had. They were dry aged enough to be really beefy in flavor, were well marbled of course and were aged enough to get the great taste without the real funky flavors you get with super long aging times. Will be ordering again

Excellent Steaks

Ordered for the first time to give them a try. Ordered the rib eyes. I eat my steak well done and finding steaks that are tender, at well done is not Easy!!! Yes these pass the test. Had two already and will order more.
