How to Cook Your Steak – Quick Guide

Thawing
If frozen, thaw your steak in a pan under refrigeration for about 24 hours to catch any natural drippings.

Season & Handle
Season just before cooking. Always use tongs when flipping—never a fork, which can puncture the steak and lose some of those flavorful juices.

Resting
After cooking, let your steak rest for at least 5 minutes so the juices redistribute evenly.

Steak Cooking Tips

Below are a few additional pointers to help you get the most out of your steak:

1. Know the cut.
Steaks are most tender and flavorful when cooked to the proper doneness- avoid overcooking.

2. Preheat well.
Your grill or broiler to hot. Charcoal should be ashen gray; cast iron should be hot but not smoking.

3. Season simply.
Salt and pepper are all you need- or elevate the flavor with Chicago Steak Company Seasoning.

4. Lightly oil the surface.
This helps prevent sticking and promotes a proper sear.

5. Sear the first side.
Cook until juices begin to bead on the surface, using the Steak Cooking Chart as a guide.

6. Flip & Finish.
The second side cooks faster, so keep a close eye on it.

7. Check Doneness.

Rare: 120°–125° F (very soft; cool red center)
Medium Rare: ~130-135°F (springy, warm red center)
Medium: 140°–145°F (slight resistance; warm pink center)
Well Done: ~160° (firm; little to no pink)

Make sure to measure temperatures at the thickest part of the steak and keep in mind steak temperature will rise 5–10°F during resting (carryover cooking).

8. Rest & serve.
Let the steak rest for at least 5 minutes before serving for a juicy, flavorful result.

Wine

Sirloin Wine Pairing

The Top Sirloin Steak has a bold flavor and is a bit leaner (less marbling) which is important to consider when pairing a wine. We suggest a You'll need a full-flavored wine with high acidity to break down the fat from the steak to create a mesh of bold flavors in your mouth.

If you prefer white wine, then champagne is your best bet. Champagne has similar acidic and flavor characteristics of red wine, so it can stand up to the boldness of the Top Sirloin Steak. If you'd rather have a red wine, then you can go a few different ways. Merlot is a popular choice but can have a more substantial taste than others and could overpower the steak. You can choose a lighter Rosé with spicy undertones to bring out the natural flavors of the Top Sirloin.

Prime Wet Aged Top Sirloin

We did a simple Salt, Pepper, Garlic after the steaks had come to room temperature. Medium Rare with a dab of fresh horseradish. Unbelievably tender for top sirloin, with all the flavor we were looking for.

Absolutely incredible

Since the sirloins are such high quality and are cut so thick, they stay extremely juicy and tender. My only complaint about these steaks is that they've caused me to never eat steak at restaurants anymore because no restaurant can make steaks that taste nearly as good as the Chicago Steak Co sirloins that I grill at my own home. Whenever I make them, I always press Chicago Steak Co steak seasoning into the steak along with some crushed red pepper flakes right before grilling them, and that seems to be the very best combination of seasonings for a steak in my personal opinion. If you're a steak sauce kind of person, the Lea & Perrins Bold steak sauce complements those seasonings beautifully, creating what I consider to be just about the greatest explosion of flavor and joy while eating a steak that I could possibly imagine, especially considering it's an extremely juicy, thick-cut, USDA Prime, corn-fed, wet-aged top sirloin from Chicago Steak Co!

Could Have Been Better

We had our USDA Prime Wet Aged Top Sirloin steaks yesterday for a birthday party. All were cooked Rare to Medium Rare. My steak was tough, like something I would get from Vons. My guests said they liked their steaks, so hopefully I was the only one with a sub-par steak. I've had much better beef from Omaha steaks and Costco.

Just bad

We bought the wet aged sirloin. It was tough and dry.
We could barely eat them. Worse meat ever. Never again would I buy this.

seasoning on sirloins

Bought the sirloin package (8 x 8 oz sirloins), and threw half of them on grill for family. Used seasoning on 2 and had 2 without seasoning. My son and wife both said from now on to season any/all sirloins, it enhanced the flavor of the steaks and was definitely a welcome addition to them. My daughter in law and I agreed when we sampled the seasoned vs the unseasoned steaks, that we preferred the seasoning as well. Can't wait to see what it does to the filets next time.

Delivery oops turned positive

I ordered the pack of (8) 8oz. USDA prime top sirloins. Wow, what a difference compared to grocery store steak. Melted in my mouth like butter and extremely flavorful. I only wish these steaks were offered in a 12oz. size as 8 oz. is just not quite enough for me, although perfect for the others in my family. I will be ordering more.
