How to Cook Your Steak – Quick Guide

Thawing
If frozen, thaw your steak in a pan under refrigeration for about 24 hours to catch any natural drippings.

Season & Handle
Season just before cooking. Always use tongs when flipping—never a fork, which can puncture the steak and lose some of those flavorful juices.

Resting
After cooking, let your steak rest for at least 5 minutes so the juices redistribute evenly.

Steak Cooking Tips

Below are a few additional pointers to help you get the most out of your steak:

1. Know the cut.
Steaks are most tender and flavorful when cooked to the proper doneness- avoid overcooking.

2. Preheat well.
Your grill or broiler to hot. Charcoal should be ashen gray; cast iron should be hot but not smoking.

3. Season simply.
Salt and pepper are all you need- or elevate the flavor with Chicago Steak Company Seasoning.

4. Lightly oil the surface.
This helps prevent sticking and promotes a proper sear.

5. Sear the first side.
Cook until juices begin to bead on the surface, using the Steak Cooking Chart as a guide.

6. Flip & Finish.
The second side cooks faster, so keep a close eye on it.

7. Check Doneness.

Rare: 120°–125° F (very soft; cool red center)
Medium Rare: ~130-135°F (springy, warm red center)
Medium: 140°–145°F (slight resistance; warm pink center)
Well Done: ~160° (firm; little to no pink)

Make sure to measure temperatures at the thickest part of the steak and keep in mind steak temperature will rise 5–10°F during resting (carryover cooking).

8. Rest & serve.
Let the steak rest for at least 5 minutes before serving for a juicy, flavorful result.

Those gift boxes are placed inside our reusable insulated cooler with enough dry ice to keep them cold until arrival. Right now my review is in limbo because what I received from this company was substandard and I contacted them and they are saying you have to try the meat and then get back to us and I sent them a picture of a local company and their view of an 8 oz New York strip and it was my view the tears was not comparable. I complained about the size and the thinness of the cut so they encouraged me to try one of their steaks which I'm going to do and I will get back to this review when I'm done

Boneless Ribeyes

Have only tried the boneless ribeyes and they were just okay. Somewhat disappointed. We used to order steaks from Texas Roadhouse Butcher Shop and their filets were melt-in-your-mouth. They no longer do mail orders so thought we would try Chicago Steak Company. Hopefully, the filets and other steaks will be better.

Store bought let downs...

Overall, Very Good. Tried of buying Steak at major stores and finding tuff and flavorless... they look good under store lighting once at home I find to be let down again. Each

First grilling

First try on the Filet. The flavor was excellent, cut smoothly, beautiful color for
a perfect medium rare, but was disappointingly dry. It really NEEDED a sauce which I will make next time; probably a nice rosemary bearnaise.
The burgers on the other hand were juicy and delicious: we are really enjoying these. Quite the surprise.

I didn't find these steaks to be any better then what I can buy locally. Perhaps my taste buds aren't what they use to be however, I can't justify the high cost.

Disappointed with shipping delays and not excited about condition of steaks

Steaks took over a week to get to me they got delayed second time this has happened and they were thawed out very disappointed for the second time. The second order I did shipped fed ex and it beat the first order here by 2-3 days and was frozen The beef wellington was great the meat that shipped ups was The Legendary Assortment showed up warm and you guys replaced it. this order Chicago's best seller showed up not frozen external temp was about 45 deg. which is border line on weather it is safe to eat. I am disappointed
