How to Cook Your Steak – Quick Guide

Thawing
If frozen, thaw your steak in a pan under refrigeration for about 24 hours to catch any natural drippings.

Season & Handle
Season just before cooking. Always use tongs when flipping—never a fork, which can puncture the steak and lose some of those flavorful juices.

Resting
After cooking, let your steak rest for at least 5 minutes so the juices redistribute evenly.

Steak Cooking Tips

Below are a few additional pointers to help you get the most out of your steak:

1. Know the cut.
Steaks are most tender and flavorful when cooked to the proper doneness- avoid overcooking.

2. Preheat well.
Your grill or broiler to hot. Charcoal should be ashen gray; cast iron should be hot but not smoking.

3. Season simply.
Salt and pepper are all you need- or elevate the flavor with Chicago Steak Company Seasoning.

4. Lightly oil the surface.
This helps prevent sticking and promotes a proper sear.

5. Sear the first side.
Cook until juices begin to bead on the surface, using the Steak Cooking Chart as a guide.

6. Flip & Finish.
The second side cooks faster, so keep a close eye on it.

7. Check Doneness.

Rare: 120°–125° F (very soft; cool red center)
Medium Rare: ~130-135°F (springy, warm red center)
Medium: 140°–145°F (slight resistance; warm pink center)
Well Done: ~160° (firm; little to no pink)

Make sure to measure temperatures at the thickest part of the steak and keep in mind steak temperature will rise 5–10°F during resting (carryover cooking).

8. Rest & serve.
Let the steak rest for at least 5 minutes before serving for a juicy, flavorful result.

Wine

Porterhouse Wine Pairing

The Porterhouse steak has a higher degree of marbling (good fat content) which should be taken in consideration when pairing a wine. With that in mind, a red wine is the perfect pairing for this steak. It's also safe to say that your chardonnay may not be the best choice for this steak.

Both Cabernet Sauvignon and Zinfandel work perfectly with the Porterhouse. Your choice will depend on how robust you like your wine flavors. Both score right in the middle of the wine sweetness scale, but the Zinfandel has some spiciness weaved into its fruity flavor

The First was Great - The Second was Spectacular

We invited a friend over to have dinner with us. I had the Porterhouse and an 18 ounce Bone-In Ribeye prepped. He chose the Bone-in Ribeye and I had the Porterhouse. It was a true Win-Win. I used the grill routine shown on your Steak University video and the results were EPIC.

Excellent Piece of Meat!

The Porterhouse arrived on the date provided well packed and frozen. Grilled it on the BBQ with a pinch of Kosher Salt and Hawaiian Black Salt. One of the very best steaks I have ever had the pleasure to enjoy!

Disappointing

Purchased two 20oz prime wet-aged porterhouse. Both steaks were reverse seared on charcoal to medium-rare, a week apart as my wife and I split the steaks: strip side to me, tenderloin to her.

The first steak was excellent, in the top ten that I've ever eaten, including steakhouses like Morton's or Gibsons. The second was just average, maybe a little bit better than what one might get at the supermarket, which is disappointing in a $70 steak. The "free" 5oz sirloins I received with the order were just as average, but you get what you pay for,

I've had similar uneven experiences with other mail order/e-commerce purveyors like Omaha and Kansas City Steaks; have the steaks were good, half just okay. I was hoping my experience with Chicago Steak company would be different.

Disappointed in the Porterhouse Steaks

The steaks were just OK, and not a noticeable difference from the Porterhouse Steaks that I purchase at Sam's. The tenderloin portion was small on both steaks, and they resembled more like T-bone steaks. I am disappointed. They definitely were not worth what I paid for them.

2 Prime24 oz. Porterhouse Steaks. #1-100 % A+, #2-50% chewy

As stated in prior survey. Received two 24 oz Prime Porterhouse steaks. One was the best +. One was not. Lots of tenderloin on one, the other was chewy and more like a T-bone. Loved the first one, not so much the other.
The customer service at Chicago Steak Co. is the very best. There was a problem with the first order and all UPS fault. I was sent a replacement immediately with no questions asked. Thank you very much!

Chicago, Chicago a steak lover's town!

Stopped ordering delivery steaks years ago. Am a steak lover and was very disappointed ordering a delivered steak. My son, on a Chicago business trip, ate a steak in a Chicago Restaurant and raved about it. He wound up sending me a gift certificate for Christmas. I ordered 4 NY Strips and 2 T-Bones (spent more than the gift certificate) and was very pleasantly surprised at the top grade quality of the meats. They rapidly moved from the freezer to the stovetop grill and we've enjoyed every bite. Used a minimum of spices.. basically salt and pepper were enough. I plan to order again... soon!

Cut too thin. Not enough filet. Looked like a nice t-bone. Meat was tender on filet, a bit tough on New York.

We are sorry to learn that your order did not live up to your expectations. All our steaks are hand cut to weight and not size, therefore the size can slightly vary from cut to cut. Poerterhouse & Burgers

I bought two 24 oz porterhouse steaks and 6 burgers. I had them sent to my son who is stationed in the Navy in the Seattle area. He received them two days early. That weekend, he cooked the steaks and said they were the best he had ever had. That's coming from a rea meat lover.

Super good!

This porterhouse exceeded my expectations. I partially defrosted it, cut out the tenderloin and then split the remainder so I get three meals. (I am a single woman.) I refroze two of the pieces and had the tenderloin that day;then one of the porterhouse halves three days later.
Delicious! A real treat, tender, tasty, juicy.
P.S. I was disappointed in the rib eyes that came with. Not very tasty :-(

I have been eating porterhouse steaks for 40 years what you sent me were t bones. I called and complained the woman I talked to I couldn't understand. She sent me 2 more steaks which were also tones the filet was about 1 inch. I won't ever but this again
