Preheat the oven to 425-degrees Fahrenheit.; 2. Heat 2 tbsp. of butter in a sauté pan over medium heat. Add shallots and cook for a couple of minutes until they begin to soften. Add the minced garlic and cook for another minute. Remove from heat.; 3. Your first step is cutting your live lobsters to prepare them for stuffing. Flip the animal over and use a sharp knife to split its body down the middle, starting from its head to the tail. Remove the inner organs, like the heart and tomalley. Discard all inners. Crack the middle of the claws on one side to allow heat to pass through. Repeat with each of the four lobster; 4. Create the stuffing by mixing together the cracker crumbs, melted butter, spices, garlic, onion, shallots, and parmesan cheese. Mix with a spoon until the cracker mixture is moist.; 5. Stuff the mixture into the body cavities of each animal. Sprinkle with a little parmesan cheese, if desired, and then top each one with crab meat.; 6. Place the lobsters stuffed side up on a rimmed baking sheet and place them in the middle of the oven.; 7. Bake for 25-30 minutes, depending on the size of your lobsters. The lobsters’ meat should become opaque and the stuffing should turn a crisp, golden-brown.; -
