This creamy garlic sauce recipe will create a unique flavor for steaks that might need a little more juice and pizazz. In fact, skirt steak and flank steak are the perfect cuts to pair with this cilantro steak sauce that bursts with garlic flavor. One of the best ways to use this garlic cilantro sauce for steak is with steak skewers, using small slabs of skirt steaks brushed with the robust sauce placed onto barbecue skewers for a fun, tasty twist on a steak dinner.

INGREDIENTS

2 lbs Skirt Steak (cut into narrow slices)
4 cloves Minced garlic
1 cup Fresh cilantro leaves (chopped)
1/2 tsp Salt
1 tbsp Fresh Lemon Juice
1/4 tsp Cayenne pepper
1/2 cup Chopped fresh basil leaves
1/2 cup EVOO Extra Virgin Olive Oil

DIRECTIONS

Mash minced garlic together with salt until it forms a paste. Place in a blender with the remaining liquid ingredients and spices.
Blend until all spices and ingredients are incorporated and the sauce is smooth.
Place a small amount of olive oil in a skillet and allow the pan to come to temperature over medium heat.
Place skirt steak in the pan without overcrowding the slices. Cook for 2-3 minutes on each side for very thin pieces, or about 4-5 minutes on each side for larger pieces.
Allow the steak to rest for about 10 minutes after cooking.
Serve with the garlic cilantro steak sauce drizzled over the steak.
Alternatively, you can thread the skirt steak onto skewers, broil them for about 3 minutes on each side, and use the sauce as a dipping sauce!
