When you think of cooking steak with fresh vegetables, you probably think of roasting the steak and veggies together on a baking pan in the oven on high heat. It’s an excellent way to cook a full meal using just one pan (easy clean-up!), but it can also take a while to do and it can be tricky to get everything to finish at the same time.

An excellent alternative – especially on days when it’s too hot to use the oven! – is pan-searing your vegetables and steak together in the same pan. This one-pan meal is perfect for two (or just double up on the pans and ingredients for the family!) and it only takes about 30 minutes from start to finish. Plus, you can’t beat the incredible sear that the skillet gives both your steak and vegetables.

  • 1/2 tsp Salt
  • 1/2 tsp Pepper
  • 4 tbsp EVOO Extra Virgin Olive Oil

  2. Preheat a 10-inch skillet over medium-high heat with 2 tbsp olive oil.
  3. Add broccoli, onion, and potatoes to the pan. Sprinkle with salt and pepper; stir, making sure that all veggies are covered with olive oil. Cover.

  5. Uncover; move vegetables around the outer edge of the pan to allow room for the steak to cook. Add 2 tbsp olive oil to the pan, followed by one steak. Cook for 3 minutes on each side until the until the internal temperature reaches 135°F (62°C) or until your desired doneness is reached.
  6. Allow steaks to rest for 5 minutes before serving with vegetables.
