INGREDIENTS
- 12 oz. Chicago Steak Company flat iron steak
- trimmed to small chunks
- 2 celery stalks
- diced
- 1 red bell pepper
- diced
- 1 cup sugar snap peas
- sliced in half
- 1 onion
- diced
- 1 cup frozen broccolli
- 2 garlic cloves
- minced
- 2 eggs
- 4 cups rice
- cooked
- 4 tbsp soy sauce
- divided
- 1 tsp Cornstarch
- 2 tbsp and 1 tsp Oil
- salt and pepper
- to taste
- sesame seeds (optional)
- scallions
- diced (optional)
DIRECTIONS
- Preheat a skillet with 1 tbsp oil over medium heat.
- Combine steak, 2 tbsp soy sauce, salt, pepper, cornstarch and 1 tsp oil in a bowl until well-mixed.
- Add eggs to skillet and cook thoroughly, scrambling them as they cook. Place them on a plate and set aside.
- Add another tbsp of oil to the skillet, allowing it to heat thoroughly. Add steak and sear for about a minute before stirring. Let sear for another minute until browned on all sides
- then, place on a plate and set aside.
- Add onions, red bell pepper, broccoli, sugar snap peas, celery, and garlic to the skillet and cook for about 2 minutes until vegetables are just tender.
- Add cooked rice to the skillet, along with salt and pepper and soy sauce. Mix and allow rice and vegetable mixture to heat through.
- Add steak and eggs to the skillet, allowing the mixture to heat through for about 2 minutes.
- Serve, topping with scallions and sesame seeds, if desired.
