Some things are better aged – and your steak is one of them. Here at Chicago Steak Company, we don’t run from aging; we value and perfect it! We specialize in dry-aged beef with the largest dry aging room in the United States. Dry aging helps perfect our hand cuts of beef by slowly breaking down muscle tissue to make your steaks as tender, melt-in-your-mouth as possible, and bringing out the most intense flavor naturally as water content evaporates during the process.
Chicago Steak Company also has wet-aged beef using a wet aging process that prevents oxidation and allows the meat to tenderize naturally and slowly. You can learn more about both processes through Steak University’s handy guides, but you can’t go wrong with a perfectly aged steak from either aging process!
