Cooking

 Allow steak to sit at room temperature (bloom) for 30 minutes. This reduces the cook time of the steak and allows for it be more evenly cooked.

Salt it! A steak this big is best with a liberal amount of salt.

Preheat oven to 425° for later. Sear porterhouse in a preheated cast iron skillet and sear for four minutes on each side.

Place steak and cast iron pan into the preheated oven and cook until you desired doneness has been reached.
