Keeping a big crowd fed during a party or family gathering can tether you to the kitchen all day. Even if you’re behind the grill flipping steaks, it’s hard to mingle and catch up with your favorite people. Recipes you can toss in the Crock Pot and then serve a few hours later with minimal attention are great for laid-back events. This Pepperoncini roast recipe relies on classic prepared mixes you’ll find at almost any grocery store for seasoning.

What Is Pepperoncini Roast?

Also known as a Mississippi roast, this dish involves a Chuck roast that spends between 6 and 8 hours cooking slowly in a Crock Pot. It’s popular throughout the Midwest and South as an easy party dinner that doesn’t take a lot of work to prepare. A few standard elements like brown gravy mix provide most of the savory flavor. As the name suggests, there’s also a spicy and tangy element from the pickled peppers. It’s a unique shredded roast you’ll have to experience to appreciate.

What Cut of Meat Works Best?

Most Pepperoncini roast recipes call for a Chuck roast. This cut of beef comes from the shoulder of the cow and receives plenty of exercise. The result is a marbled texture and great flavor, but a texture that can turn out tough. Slow cooking provides a tender texture that falls apart when you shred it with a fork. Some people substitute the Chuck roast for an affordable Eye Round or Top Round roast. The Sirloin Tip roast can also work and tends to be a little smaller for quicker cooking times.

Cooking Methods for Pot Roast

This recipe calls for using a slow cooker, but you can also make a Pepperoncini pot roast in the oven. Use a Dutch oven or roasting dish with a tight fitting lid. Set the temperature to 300 degrees F and cook for 2 hours before checking the texture. Keep braising until the meat is tender enough to break apart with a fork, adding a little water if necessary to keep the liquid level up. You can also use the stovetop to braise the roast in the same way.

Recipe Tips

  • For the simplest and fastest roast, just place the meat in the Crock Pot and dump an entire jar of pepperoncini’s and the juice over them.
  • Let the roast come to room temperature before placing it in the slow cooker for an even softer texture.
  • Sear the meat in a cast iron pan on the stove, a minute or two per side, before placing it in the Crock Pot for extra flavor.

How to Serve the Roast

It’s common to serve the meat up on hoagie rolls, baguettes, or other dense bread that can handle the flavorful juices of this beef dish. Guests can add cheese, lettuce, and other toppings as they wish to customize their sandwiches. Set out small bowls of the leftover juice from cooking for French dip style sandwiches. Wraps and tortillas are good options for making the most of the juicy beef as well. If you’re not up for sandwiches, you can present the shredded meat alongside a variety of side dishes.

Suggested Side Dishes for Pepperoncini Pot Roast

If you’re not serving the Pepperoncini roast recipe as sandwiches, consider pairing it with mashed potatoes, steamed white rice, or other starchy dishes that can soak up the tasty juices. Another good option is topping a salad or vegetable bowl with the tangy shredded beef. It’s a great option for using up leftovers that make the most of the rich flavor profile.
