Paul Fleming – the “F” in PF Chang’s – founded this upscale steak and vino chain a little over 15 years ago. Since then, it’s come to rival Ruth’s Chris and Morton’s in terms of profile and prominence. Famous not only for its steaks – all USDA Prime, seared at 1600 F and topped generously with butter – Fleming’s also serves up The Fleming’s 100, an award-winning curated wine list from its national Director of Wine, Maeve Pesquera. The St. Louis location offers a “5 for $6 till 7” happy hour menu for discount diners, with a selection of choice drinks and dishes available at an easy $6 until 7:00 PM.
